DAY 23: 40 DAY RAW FOOD CHALLENGE

The Travelling Foodie's Random Salad

I am not able to pull myself out of bed today. I am having trouble opening my eyes. Got my periods last evening and I am feeling quite heavy today. I can sleep for 24 hours straight. But I finally I force myself to do so as I have to pack my lunch and in-between snacks in dabbas. My groggy self just digs into the fridge and decides to make today's salad with whatever the hand grabs.

Day starts with a juice of Banana, a few grapes, figs, some honey and water. It tastes better than expected. My hand has got hold of an iceberg lettuce, a capsicum, cucumber, tomato. I decide to add an onion and some freshly plucked oregano leaves from my kitchen garden. So this is the salad I come up with...

The Travelling Foodie's Random Salad

Ingredients:

4-5 leaves of iceberg Lettuce - washed and torn by hand

1 White Onion finely chopped

1 Tomato finely chopped

1 Cucumber finely chopped

1/2 Capsicum finely chopped

Some fresh oregano leaves

Kiwi

For Dressing:

1/4 tsp Chilli Flakes

1/2 tspSalt

1/4 tsp Pepper

1 tbsp Maple Syrup

1/2 Lemon

1 Petal of grated garlic

Method:

Mix all the ingredients together and add the dressing just before you want to gobble it up.

I have some jamuns, kiwis, dry fruits and aamras when I get hungry. I have carried cucumber sticks with the Rajkot chutney for the evening. By the time I reach home it is past 9.30. But I am quite satisfied. It was a fruitful day at work. I am hungry.

So I make a quick bhel for myself with Kurmura, chopped onion and the mint chutney I have in the fridge. I top it with a mango, orange and banana sorbet that is lying in the freezer, feel satiated, do some sorting and cleaning and end Day 23 on a positive note :)
